Carrots are one of the richest vegetables in vitamin A, which plays an important role in maintaining good eyesight. Our booklet includes a selection of vegan and vegetarian carrot recipes from Cambodia, Laos, Nepal, Vietnam, Tanzania, and the Netherlands – countries where our foundation works towards better eye care. The recipes are easy and super fun to make. Ranging from soups to burgers and cake, they are suited to different tastes and are also kid-friendly!
